- 2 large sweet potatoes
- 1 pound ground beef
- 1 packet taco seasoning
- 1/2 cup water
- 1 cup shredded cheddar cheese
- Toppings: your favorites (lettuce, tomato, sour cream, salsa, etc.)
- Preheat oven to 400°F (200°C).
- Bake sweet potatoes for 45-60 minutes, or until tender.
- While potatoes bake, brown ground beef. Drain fat.
- Add taco seasoning and water to beef. Simmer.
- Once potatoes are cooked, slice open.
- Fill with taco meat.
- Top with cheese and toppings.
