- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 teaspoon salt
- 1 1/2 cups granulated sugar
- 3/4 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 (8 ounce) can crushed pineapple, undrained
- 1 cup shredded carrots
- 1/2 cup chopped walnuts or pecans (optional)
- Cream cheese frosting (recipe follows)
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, whisk together flour, baking soda, cinnamon, nutmeg, cloves, and salt.
- In a separate bowl, whisk together sugar, oil, eggs, and vanilla.
- Stir in the crushed pineapple (with juice), shredded carrots, and nuts (if using).
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour batter into prepared pan.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool completely before frosting.
- Frost with cream cheese frosting.
Notes
- For a richer flavor, toast the nuts before adding them to the batter.
- You can substitute applesauce for some of the oil to make the cake healthier.
- Store leftover cake in the refrigerator.
