A delicious cake with pineapple and carrot.

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 1/2 cups granulated sugar
  • 3/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 (8 ounce) can crushed pineapple, undrained
  • 1 cup shredded carrots
  • 1/2 cup chopped walnuts or pecans (optional)
  • Cream cheese frosting (recipe follows)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In a separate bowl, whisk together sugar, oil, eggs, and vanilla.
  4. Stir in the crushed pineapple (with juice), shredded carrots, and nuts (if using).
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Pour batter into prepared pan.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool completely before frosting.
  9. Frost with cream cheese frosting.

Notes

  • For a richer flavor, toast the nuts before adding them to the batter.
  • You can substitute applesauce for some of the oil to make the cake healthier.
  • Store leftover cake in the refrigerator.
