Ingredients

  • 34 lb corned beef brisket
  • 1 tbsp pickling spice
  • 1 onion, quartered
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 cup beef broth
  • 1/2 cup water

Instructions

  1. Rinse the corned beef brisket and pat dry.
  2. Place onion, carrots, and celery in the Instant Pot.
  3. Add the brisket on top.
  4. Sprinkle with pickling spice.
  5. Pour in beef broth and water.
  6. Cook on high pressure for 75-90 minutes (depending on size).
  7. Let pressure release naturally for 15 minutes, then quick release.
  8. Shred or slice the corned beef and serve.
