Classic hot cross buns recipe with raisins.

Ingredients

  • 500g strong bread flour
  • 7g instant yeast
  • 50g caster sugar
  • 5g salt
  • 280ml milk, lukewarm
  • 50g unsalted butter, softened
  • 1 large egg
  • 100g raisins
  • For the cross: 50g plain flour, mixed with 3-4 tablespoons of water
  • For the glaze: 2 tablespoons apricot jam, warmed

Instructions

  1. In a large bowl, mix flour, yeast, sugar, and salt.
  2. Add milk, butter, and egg. Mix until a dough forms.
  3. Knead for 8-10 minutes.
  4. Add raisins and knead briefly.
  5. Place dough in a greased bowl, cover, and let rise for 1 hour.
  6. Knock back the dough and divide into 12 buns.
  7. Shape into balls and place on a baking sheet.
  8. Let rise for 30 minutes.
  9. Make the cross: mix flour and water to a paste. Pipe onto buns.
  10. Bake at 200°C (180°C fan/gas mark 6) for 20 minutes.
  11. Glaze with warmed apricot jam.

  • You can add spices like cinnamon and nutmeg.
  • Adjust baking time based on your oven.
  • Cool completely before serving.
