Ingredients

  • 2 large eggplants, sliced
  • Salt
  • 2 cups all-purpose flour
  • 2 large eggs, beaten
  • 2 cups breadcrumbs
  • Vegetable oil for frying
  • 3 cups tomato sauce
  • 2 cups ricotta cheese
  • 1 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • Fresh basil leaves for garnish

Instructions

  1. Salt the eggplant slices and let them sit for 30 minutes.
  2. Rinse and pat dry the eggplant.
  3. Set up a breading station: flour, eggs, and breadcrumbs.
  4. Dredge eggplant in flour, then egg, then breadcrumbs.
  5. Fry eggplant in hot oil until golden brown.
  6. Layer tomato sauce, eggplant, ricotta, Parmesan, and mozzarella in a baking dish.
  7. Repeat layers.
  8. Bake until cheese is melted and bubbly.
  9. Garnish with basil.
