These coconut lime cupcakes are a tropical delight.

Ingredients

  • 1 teaspoon baking powder

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • Zest of 1 lime
  • For the frosting: 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1/4 cup lime juice
  • 1/4 cup shredded coconut

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, cream together butter and sugar. Beat in eggs and vanilla.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with coconut milk. Mix until just combined. Fold in lime zest.
  5. Fill cupcake liners about 2/3 full. Bake for 18-20 minutes.
  6. Let cupcakes cool completely before frosting.
  7. For the frosting: Beat butter until smooth. Gradually add powdered sugar and lime juice. Mix until fluffy. Fold in shredded coconut.
  8. Frost the cupcakes and enjoy!
