- 1 teaspoon baking powder

- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup coconut milk
- Zest of 1 lime
- For the frosting: 1 cup unsalted butter, softened
- 3 cups powdered sugar
- 1/4 cup lime juice
- 1/4 cup shredded coconut
- Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- In a bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, cream together butter and sugar. Beat in eggs and vanilla.
- Gradually add the dry ingredients to the wet ingredients, alternating with coconut milk. Mix until just combined. Fold in lime zest.
