Make delicious chicken noodle soup from scratch.

Ingredients

  • Chicken: 1 whole (about 3-4 pounds)
  • Water: 12 cups
  • Onion: 1 large, chopped
  • Carrots: 2 large, peeled and chopped
  • Celery: 2 stalks, chopped
  • Garlic: 2 cloves, minced
  • Bay leaf: 1
  • Salt: To taste
  • Black pepper: To taste
  • Egg noodles: 8 ounces
  • Fresh parsley: 1/4 cup, chopped (for garnish)

Instructions

  1. Place chicken in a large pot.
  2. Add water, onion, carrots, celery, garlic, and bay leaf.
  3. Season with salt and pepper.
  4. Bring to a boil, then reduce heat and simmer for 1.5-2 hours, or until chicken is cooked through.
  5. Remove chicken from pot.
  6. Shred the chicken meat, discarding skin and bones.
  7. Strain the broth.
  8. Return broth to the pot.
  9. Add egg noodles and cook according to package directions.
  10. Add shredded chicken to the soup.
  11. Season to taste.
  12. Garnish with fresh parsley.

Notes

  • You can add other vegetables, like peas or corn.
  • For a richer flavor, use chicken broth instead of water.
  • Adjust seasoning to your preference.
