A hearty and comforting beef barley soup made in a slow cooker.

Ingredients

  • 1.5 lbs beef stew meat
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 8 cups beef broth
  • 1 cup pearl barley
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a skillet. Brown the beef stew meat.
  2. Transfer beef to the slow cooker.
  3. Add onion, carrots, celery, and garlic to the slow cooker.
  4. Pour in beef broth.
  5. Stir in pearl barley, thyme, and rosemary.
  6. Season with salt and pepper.
  7. Cook on low for 6-8 hours or on high for 3-4 hours.
  8. Garnish with fresh parsley before serving.

Notes

  • You can add other vegetables like potatoes or mushrooms.
  • Adjust seasonings to your taste.
  • For a thicker soup, remove some liquid and blend a portion of the soup.
